契約してからまずは店舗の図面とレイアウトを詳細に作り（今まで自分の家での実践が役立ちました）、それに合わせた什器・備品探しを行います。

おにぎり屋さんは食品衛星管理者を取る必要があり、都合により東京で取ったが、インターネットで調べる限り、千葉県は営業許可を取るための店舗要件がずいぶん軽い気がする。念のため、と思い直接保健所に出向き店舗要件を確認すると、なんて事はない、いや、なんて事があるすぎるくらい厳しい！これは考えていた初期投資費用では到底賄えないのではないか？と頭をよぎった瞬間から、自分の見積りより更に厳しく備品を調査することにしました。
しかし今は便利な世の中で、捨てる神あれば拾う神あり、厨房設備などはすべて中古で揃う。しかもかなり良い物が。おにぎりを置くショーケースをはじめ、厨房機器一式はすべて良質な中古で揃えることができました。ところでおにぎり屋さんに厨房？と思われるかもしれませんが、これが「厳しい！」の部分で、おにぎりにぎるだけでここまで厳しくなくったっていいだろう？と何度も思いましたが保健所の営業許可が下りないのでしょうがない。厨房設備で浮かせた費用はすべて厨房のパーテーション工事に消えて行きました。
レジ台や、地元産物の陳列台などはすべて手作りで費用を抑え、なんとかかんとか予定の準備金内でオープンにこじつけることができ、正直ホッとしております。
